Upon arrival, the small group will sit down to discuss the day’s programme over coffee. Your teacher, Paul, has been involved in the industry for over forty years – twenty of which have been spent teaching courses like yours. Under his capable supervision, you’ll learn to make a delicious West Country saffron dough cake, in addition to white, wholemeal and granary loaves. You’ll try your hand at shaping rolls, cobs, plaits and bloomers, and discuss the fermentation process behind great-tasting, ‘real’ bread. When your traditional creations head to the oven – and whilst you anxiously await their reappearance – you’ll enjoy a tour of the working watermill the class occupies, before the final test of your day’s labour – the tasting!
